Angel Flake Coconut Pie



Baker's Angel Flake Sweetened Coconut Pie

INGREDIENTS:
2 cups Milk
1 cup Sugar
1 cup All-purpose Baking Mix*** (or you can use Aunt Jemima pancake and waffle mix)
4 Eggs
1/4 cup (1/2 stick) Butter or Margarine, softened
1 tsp. Vanilla Extract
1-1/3 cups Baker's Angel Flake Sweetened Coconut



PREPARATION TIME: 10 minutes
BAKING TIME: 45 - 50 minutes

PREPARATION INSTRUCTIONS:
  1. Pour 2 cups of milk into mixing bowl.
  2. Add 4 eggs into mixing bowl and start beating using egg beater.
  3. Melt butter or margarine in a small skillet and add to mixing bowl.
  4. Add the remaining ingredients into the mixing bowl except coconut.
  5. Continue whisking all the ingredients until lumps of flour are gone.
  6. Pour the mixture into greased 9-inch pie plate or in my case, I used a 12-inch baking rack covered with non-greasy baking parchment paper. I recommend using parchment.
  7. Sprinkle with Baker's Angel Flake sweetened coconut.



If you prefer using the blender instead of doing it manually, it's perfectly fine. Just put all the ingredients in the blender, cover and blend on low speed for 3 minutes.

*** I used Gold Medal self-rising flour for more volume and pluffy end-result. You can also use Aunt Jemima Buttermilk pancake and waffle mix or an all-purpose baking mix. It's your choice depending on your taste and whatever is available on hand. 

BAKING INSTRUCTIONS:

Bake at 350 degrees Fahrenheit for 45 - 50 minutes or until center of pie is set and top is golden brown. Serve warm or cool on wire rack. Store left-over pie in refrigerator.
Makes 8 servings.



I had fun doing this. You will never know you could do anything until you tried. I just crave for a freshly baked "buko" pie (coconut pie) which I haven't had for over twenty years. That's why I decided to make one, and I wasn't disappointed.

I used to work as an Electrical Project Engineer for Franklin Baker Company, a subsidiary of General Foods Corporation in San Pablo City, Laguna, Philippines in the early eighties. They are one of the largest Philippine producers of dessicated, processed and value added coconut products. Baker's Angel Flake Coconut Sweetened, the main ingredient in this article, is just one of their many specialty products. Back then I never had a chance to taste our products and always wondering how delicious it could be, until now. Have a slice of my favorite coconut "buko" pie.
